Spelt Cake with Rhubarb & Blood Orange is one of our baker’s favorite. It’s a moist and nutty cake with complex flavor – rhubarb, blood oranges (when in season), spelt flour* and almond flour all being important contributors. Rhubarb’s tang pairs superbly with slight bitterness of orange and subtle sweetness of brown sugar. While modern wheat flour doesn’t have much flavor, whole grain spelt is a wonderfully nutty tasting ancient wheat variety. Spelt is tolerated by many people who are sensitive to modern wheat.

We only use fresh rhubarb in our cakes, which sadly makes availability of this treat limited to rhubarb season.

Store in the fridge for 5 days. Freezes well.
