Lemon flavored farmer’s cheese layer is baked on coconut shortbread crust, and topped with raspberries that deliver burst of flavor. This very Estonian cake is best served at room temperature for maximum flavor.

At farmer’s markets we often get asked what farmer’s cheese is like. Farmer’s cheese resembles drained cottage cheese, but with more texture and flavor with a bit tang to it. In Estonia we use it for both savory and sweet dishes and in baked goods. Sometimes farmer’s cheese is called curd cheese.
